A Tale of Two S'mores
Is there a better way to celebrate summer than with S’mores? Personally, I’ve never spent any time at a campground over a fire, toasting marshmallows then sandwiching them between graham crackers and a chunk of chocolate. Growing up American- Italian, these luscious treats were not a part of our usual summer. But one taste at a neighbor’s Fourth of July picnic in the late seventies ( cue the Bruce Springsteen) definitely had me hooked. What’s not to love?
For many years I have struggled to capture these flavors in a cake. I have tried to fill a cake with marshmallow fluff, thinking it the ultimate S’mores cake filling. But fluff definitely has ideas, and a path of its’ own. It just won’t stay in a cake! It busts out and leaks all over. We have had better luck stuffing fluff into cupcakes. So with this, I remind you of this summer deliciousness. Our S’mores cupcakes are vanilla cakes, filled with marshmallow fluff, topped with chocolate buttercream, mini marshmallows, chocolate chips and graham cracker crumb. Our S’mores cake is just as delicious, minus the fluff. Yellow cake filled with chocolate buttercream, chocolate chips, mini marshmallows and graham cracker crumb. Either way it’s a sweet way to celebrate summer. And we can all use a little sweet celebration this summer.
